However, when my whole family along with grandkids gathers for dinner, it's just not enough anymore! I have now discovered that baked rice turns out super fluffy! As you can tell, the family digs in before I even get to take a photo!<\/p>\r\n\r\n<p style=\"max-width: 40%;float: right;margin-left: 15px;margin-bottom: 10px\">\r\n<a href=\"https:\/\/wendywidgets.com\/ATasteOfYum\/wp-content\/uploads\/2024\/05\/baked-rice2-scaled.jpg\">\r\n<img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/wendywidgets.com\/ATasteOfYum\/wp-content\/uploads\/2024\/05\/baked-rice2-scaled.jpg\" alt=\"\" width=\"2560\" height=\"2558\" class=\"alignnone size-full wp-image-4743\" \/><\/a>\r\n<\/p>\r\n\r\n<p>Since my favorite rice is basmati, the water\/rice ratio below has been tested only with basmati rice. I will leave you to experiment with other types of rice. Make sure to use a casserole dish with a tight-fitting lid. <\/p>\r\n\r\n<p><ul>\r\n\t<li>1 cup basmati rice<\/li>\r\n\t<li>1-3\/4 cups boiling water<\/li>\r\n\t<li>Salt and spices to taste<\/li>\r\n<\/ul><\/p>\r\n\r\n<p><ol>\r\n\t<li>Preheat oven to 375\u2109.<\/li>\r\n\t<li>Rinse and thoroughly drain the rice.<\/li>\r\n\t<li>Add the rice to your casserole dish. Cover with boiling water. Add salt and spices.<\/li>\r\n\t<li>Cover and bake for 25 minutes.<\/li>\r\n\t<li>Let sit for a few minutes before removing lid. Make sure to taste it as you\u2019re cooking, adding more spices as needed.<\/p>\r\n<p id=\"acc-serv\">Servings:  8<\/p>\r\n<p><ul>\r\n\t<li>1 medium onion<\/li>\r\n\t<li>1 green or yellow pepper, stemmed, seeded and chopped<\/li>\r\n\t<li>\u00bd - 1 jalapeno chili, stemmed, seeded and finely diced (optional)<\/li>\r\n\t<li>2 cloves garlic, minced<\/li>\r\n\t<li>4 cups cooked brown rice<\/li>\r\n\t<li>1 14-oz can fire-roasted diced tomatoes with liquid (I often use a 28-oz can) <\/li>\r\n\t<li>1 15-oz can (1.5 cups) black beans, rinsed well<\/li>\r\n\t<li>1 tsp ground cumin<\/li>\r\n\t<li>1 tsp chili powder (regular)<\/li>\r\n\t<li>\u00bd tsp chipotle chili powder (to taste)<\/li>\r\n\t<li>\u00bd tsp smoked paprika<\/li>\r\n\t<li>Salt and freshly ground black pepper to taste<\/li>\r\n<\/ul><\/p>\r\n\r\n<p><ol>\r\n\t<li>Heat skillet over medium heat. This can be served as either a main course or a side dish. Add more hot pepper sauce if you like it spicy!<\/p>\r\n\r\n<p id=\"acc-serv\">Servings: 4<\/p>\r\n\r\n<p><ul>\t<li>16-oz black-eyed peas, drained<\/li>\r\n\t<li>2 cups brown rice or Basmati light brown rice, cooked<\/li>\r\n\t<li>Vegetable oil (as needed)<\/li>\r\n\t<li>1 cup peanuts, chopped (optional)<\/li>\r\n\t<li>1 Tbsp. fresh ginger, grated<\/li>\r\n\t<li>1 cup chopped onion<\/li>\r\n\t<li>1 large green pepper, diced<\/li>\r\n\t<li>2 cups celery, chopped<\/li>\r\n\t<li>1 carrot, sliced thin<\/li>\r\n\t<li>1 cup frozen green peas, thawed<\/li>\r\n\t<li>1 cup pineapple tidbits, reserve 2 Tbsp. juice<\/li>\r\n\t<li>2 Tbsp. soy sauce<\/li>\r\n\t<li>Dash of salt<\/li>\r\n\t<li>Dash hot pepper sauce<\/li>\r\n<\/ul><\/p>\r\n\r\n<p><ol>\r\n\t<li>In a large pan, saut\u00e9 peanuts in some of the vegetable oil until toasty. Take out the peanuts and set them aside.<\/li>\r\n\t<li>Add the grated ginger and onion to the oil, and cook until the onions are translucent.<\/li>\r\n\t<li>Add the chopped celery, carrot and the diced green pepper. Cook until slightly tender.<\/li>\r\n\t<li>Add the rest of the ingredients, except for the rice. Bring just to a boil and then take off the heat.<\/li>\r\n\t<li>Stir in the cooked rice. <\/li>\r\n        <li>Sprinkle toasted peanuts on top. You really don't need a recipe for this, since you can add whatever vegetables you have on hand and your favorite spices. But here is what I did for a potluck recently, and everyone loved it.<\/p>\r\n\r\n<p style=\"max-width: 40%;float: right;margin-left: 15px;margin-bottom: 10px\">\r\n\r\n<a href=\"https:\/\/wendywidgets.com\/ATasteOfYum\/wp-content\/uploads\/2025\/09\/wild-rice-bag.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/wendywidgets.com\/ATasteOfYum\/wp-content\/uploads\/2025\/09\/wild-rice-bag.jpg\" alt=\"\" width=\"627\" height=\"994\" class=\"alignnone size-full wp-image-4936\" srcset=\"https:\/\/wendywidgets.com\/ATasteOfYum\/wp-content\/uploads\/2025\/09\/wild-rice-bag.jpg 627w, https:\/\/wendywidgets.com\/ATasteOfYum\/wp-content\/uploads\/2025\/09\/wild-rice-bag-189x300.jpg 189w\" sizes=\"auto, (max-width: 627px) 100vw, 627px\" \/><\/a>\r\n\r\n<\/p>\r\n\r\n<p><ul>\r\n\t<li>Wild rice (see photo)<\/li>\r\n\t<li>Roasted butternut squash<\/li>\r\n\t<li>Chopped onions and mushrooms<\/li>\r\n\t<li>Canned chickpeas (drained)<\/li>\r\n\t<li>Raw cranberries, chopped finely<\/li>\r\n\t<li>Suggested spices (to taste): garlic, smoked paprika, coriander, cumin, rosemary<\/li>\r\n\t<li>Salt and pepper<\/li>\r\n<\/ul><\/p>\r\n\r\n<p><ol>\r\n\t<li>Cook rice according to package directions (I used a rice cooker).<\/li>\r\n\t<li>Cube the butternut squash; toss with a small amount of olive oil and spices, then roast at 400\u00b0F for about 30 mins.<\/li>\r\n\t<li>Sautee the onions and mushrooms.<\/li>\r\n\t<li>Combine all of the ingredients in a large crockpot, mixing as you go to visually determine the quantity of each ingredient. The sugar and calcium in the molasses slows down the cooking process, preventing the beans from becoming mushy and keeping them tender for a long time.<\/p>\r\n\r\n<p>Since I do not own an Instant Pot, I make this in my crock pot (slow cooker). But I've added instructions for both methods, though the instant pot directions are untested by me.<\/p>\r\n\r\n<strong>SLOW COOKER (Crock Pot)<\/strong><br>\r\n<em>Cooking time<\/em>: 8-10 hours\r\n<br>\r\n<ol>\r\n\t<li>Add all ingredients to the slow cooker. Gently stir until the tomato paste has broken up and dissolved.<\/li>\r\n\t<li>Cook on HIGH for 8 \u2013 10 hours. Check periodically, adding up to 1\/2 cup more water as needed. You will also want to check for doneness towards the end so the beans don\u2019t overcook.<\/li>\r\n\t<li>Remove bay leaves. Add salt and spices as needed.<\/li>\r\n<\/ol>\r\n\r\n<strong>INSTANT POT<\/strong><br>\r\n<em>Cooking time<\/em>: 2 hours and 5 minutes\r\n<br>\r\n<ol>\r\n\t<li>Press the SAUTE setting on your Instant Pot and add 1\/4 cup water. When hot, add onion and saute for 4 minutes.<\/li>\r\n\t<li>Add the spices (smoked paprika, garlic and onion powder), cook for 1 minute or until fragrant, stirring frequently.<\/li>\r\n\t<li>Add the remaining ingredients and gently stir until the tomato paste is dissolved completely and everything is well combined.<\/li>\r\n\t<li>Attach the lid, making sure the vent is in the SEALED position. Push the PRESSURE COOKER button, and manually set at HIGH for 75 minutes (1 hour + 15 min) for beans that are just done. For softer beans, cook for 90 minutes (1 hour + 30 min).<\/li>\r\n\t<li>When done, let the steam vent for 20 minutes. After opening the vent and removing lid, let cool slightly. Remove bay leaves, then taste and add salt or spices as needed.<\/li>\r\n\t<li>Beans will thicken once cooled. Add onion, garlic and salt. Cook 5-8 minutes until onions are browned.<\/li>\r\n\t<li>Add chili, cumin, beans and water.<\/li>\r\n\t<li>Cook for 5 minutes.
