But these days you can find whole grain, spinach, tomato, quinoa, chia, flax, chickpea tortillas and more.<\/p>\n<p>So check the ingredients! Pick tortillas made with whole grains or vegetables, and high in fiber. Avoid those containing shortening (a <a href=\"https:\/\/wendywidgets.com\/ATasteOfYum\/health-fat\/\">saturated fat<\/a>), cellulose fiber or fiber from modified food starch, and anything with Using a large tortilla, you can either eat as a single large wrap, or slice to make several mini-wraps.<\/p>\r\n<p>This is good with a side of <button id=\"btnSourCream4\" class=\"modal-btn\" data-toggle=\"modal\" data-target=\"#mySourCream4\">Cashew Sour Cream<\/button><span id=\"btnSourCream4Text\">Cashew Sour Cream (see link above)<\/span>.<\/p>\r\n\r\n<div id=\"mySourCream4\" class=\"modal\"><\/div>\r\n\r\n<p><ul>\t<li>2 tsp olive oil<\/li>\r\n\t<li>1 block firm tofu<\/li>\r\n\t<li>1\/2 tsp garlic<\/li>\r\n\t<li>1\/2 tsp turmeric<\/li>\r\n\t<li>1 tsp curry powder<\/li>\r\n\t<li>1\/2 tsp salt<\/li>\r\n\t<li>2 cup mushrooms, diced<\/li>\r\n\t<li>2 cups spinach, chopped<\/li>\r\n\t<li>2 green onions, chopped<\/li>\r\n\t<li>Leftover veggies or rice (optional)<\/li>\r\n\t<li>A handful of cherry tomatoes, quartered<\/li>\r\n\t<li>2 tortillas<\/li>\r\n\t<li>Hummus \u2013 store bought or <button id=\"btnHummus2\" class=\"modal-btn\" data-toggle=\"modal\" data-target=\"#myHummus2\">homemade hummus<\/button><span id=\"btnHummus2Text\">homemade hummus (see link above)<\/span>.<\/li>\r\n<\/ul><\/p>\r\n\r\n<div id=\"myHummus2\" class=\"modal\"><\/div>\r\n\r\n<p><ol>\r\n\t<li>Heat the olive oil in a large pan. Scramble the tofu with your hands and place in pan.<\/li>\r\n\t<li>Add the garlic, turmeric, curry and salt. Mix well so that the tofu picks up the yellow color.<\/li>\r\n\t<li>Add the mushrooms, spinach and onions, and cook for about 10 minutes.<\/li>\r\n\t<li>Add the leftovers (if any), and cook until heated.<\/li>\r\n\t<li>Adjust spices to taste.<\/li>\r\n\t<li>Heat the tortillas in a pan until warm and slightly browned. Spread on 1-2 TBSP of the hummus.<\/li>\r\n\t<li>Top with the tofu mixture. Add the first set of ingredients, and cook for 3-4 minutes or until the onions and peppers are softened.<\/li>\r\n\t<li>Turn off the heat and stir in the cilantro. Set aside.<\/li>\r\n\t<li>Using a clean skillet, apply cooking spray very sparingly.<\/li>\r\n\t<li>Over medium heat, place the tortilla in the skillet. Top with 1\/4 of the cheese. Layer with half of the cooked veggie mixture and another layer of cheese. Place the second tortilla on top. Flipping only once, cook until golden, about 3 minutes per side.<\/li>\r\n\t<li>While the second tortilla is cooking, repeat the layers using the remaining ingredients. This is good served with guacamole, \r\n<button id=\"btnSourCream2\" class=\"modal-btn\" data-toggle=\"modal\" data-target=\"#mySourCream2\">Cashew Sour Cream<\/button>\r\n<span id=\"btnSourCream2Text\">Cashew Sour Cream (see link above)<\/span>, fruit or sliced avocado.<\/p>\r\n\r\n<p>The recipe calls for a combo of beans and vegetables for the filler. For this image, I used fresh green beans and a can of black beans. But you can also skip the canned beans and use two different veggies.<\/p>\r\n\r\n<div style=\"width: 100%\" id=\"mySourCream2\" class=\"modal\"><\/div>\r\n\r\n<p>Just because there are tortillas in this recipe does not mean that you have to make this a Mexican dish. So where the ingredients call for \"your choice of spice\", you could use chipotle pepper in adobo sauce, dried chili peppers, smoked paprika or go a completely different route and use Thai red curry paste or an Asian spice blend. Once it's all baked, you barely notice the tortillas!<\/p>\r\n\r\n<p><ul>\t<li>2 tsp olive oil<\/li>\r\n\t<li>1 red onion, diced<\/li>\r\n\t<li>2 garlic cloves (or 2 tsp minced garlic)<\/li>\r\n\t<li>1 red bell pepper, diced<\/li>\r\n\t<li>1 green bell pepper, diced<\/li>\r\n\t<li>Chopped spinach or kale<\/li>\r\n\t<li>1 tsp cumin<\/li>\r\n\t<li>Salt and pepper, to taste<\/li>\r\n\t<li>3 cups of a beans and veggie combo, such as:<\/li><ul style=\"margin-bottom: 0\">\r\n\t      <li>1 14-oz can black (or other) beans, drained<\/li>\r\n\t      <li>1 14-oz can sweet corn OR 1-1\/2 cups fresh vegetable of your choice, pre-cooked and thoroughly drained<\/li><\/ul>\r\n\t<li>1 14-oz can tomato or enchilada sauce (about 1-1\/2 cups)<\/li>\r\n\t<li>4 whole grain or vegetable tortillas (large)<\/li>\r\n\t<li>1 chipotle pepper in adobo sauce, blended OR your choice of spice (see ideas above)<\/li>\r\n\t<li>1-1\/2 cups cheese, non-dairy or other; I like to use \r\n<button id=\"btnCheezSauce1\" class=\"modal-btn\" data-toggle=\"modal\" data-target=\"#myCheezSauce1\">Cheez Sauce<\/button><span id=\"btnCheezSauce1Text\">Cheez Sauce (see link above)<\/span> for half of the cheese.<\/li>\r\n<\/ul><\/p>\r\n\r\n<div style=\"width: 100%\" id=\"myCheezSauce1\" class=\"modal\"><\/div>\r\n\r\n<p><ol>\r\n\t<li>Preheat oven to 400\u2109<\/li>\r\n\t<li>Heat the oil in a skillet and add the onion, garlic, peppers, spinach\/kale, cumin, salt and pepper. Stir until the veggies are nice and browned, about 3-5 minutes.<\/li>\r\n\t<li>Add the 3 cups of beans\/vegetables. Stir to combine, and set aside.<\/li>\r\n\t<li>Mix your \"choice of spice\" into the tomato sauce.<\/li>\r\n\t<li>Cut the tortillas into strips.<\/li>\r\n\t<li>Spread a little tomato sauce on the bottom of an 8\" or 9\" square baking dish. Add half of the tortilla strips, allowing them to overlap. Add half of the veggie mix, spreading evenly. Top with half of the remaining tomato sauce and half of the cheese (this is where I use the <em>Cheez Sauce<\/em>). <\/li>\r\n\t<li>Repeat, adding another layer of tortilla strips, veggies, tomato sauce, and top with the remaining cheese.<\/li>\r\n\t<li>Loosely cover the dish with foil and bake for 15 minutes. You can use a variety of sauces, such as hummus, tomato sauce or my <button id=\"btnBeanSauce2\" class=\"modal-btn\" data-toggle=\"modal\" data-target=\"#myBeanSauce2\">Cannellini Cream Sauce<\/button><span id=\"btnBeanSauce2Text\">Cannellini Cream Sauce  (see link above)<\/span>. Note that it's the sauce that gives the pizza most of its flavor, so make sure to add your favorite spices!<\/p>\r\n\r\n<p>Apart from the olives, the suggested toppings listed below are the ones used for the pizza shown in the image.<\/p><\/div>\r\n\r\n<ul style=\"padding-left: 15px !important\">\r\n\t<li>4 whole-grain or veggie tortillas<\/li>\r\n\t<li>Hummus or sauce of your choice to spread on the tortillas<\/li>\r\n<div id=\"myBeanSauce2\" class=\"modal\" style=\"margin-left: 0 !important\"><\/div>\r\n\t<li>Toppings of your choice (here are some examples):\r\n<ul>\r\n\t    <li>Plant-based beef crumbles, cooked<\/li>\r\n\t    <li>1 cup red bell pepper, sliced<\/li>\r\n   \t    <li>1 cup chopped spinach<\/li>\r\n\t    <li>1\/2 cup red onion, diced<\/li>\r\n\t    <li>Mushrooms, chopped<\/li>\r\n\t    <li>Broccoli (no need to pre-cook if using only a thin layer sliced off the top, and no stalks)<\/li>\r\n\t    <li>Olives<\/li>\r\n\t    <li>Spices, salt and pepper, to taste<\/li>\r\n\t    <li>Shredded cheese (optional, non-dairy or other)<\/li>\r\n<\/ul><\/li>\r\n<\/ul>\r\n\r\n<ol>\r\n\t<li>Preheat oven to 400\u2109. Line baking sheet with parchment paper.<\/li>\r\n\t<li> Bake tortillas until just crisp and golden, about 8 minutes. Watch closely, since tortillas can burn quickly. Remove from oven. Let cool slightly on baking sheet.<\/li>\r\n\t<li>Spread a layer of hummus or sauce over each tortilla. Add toppings.<\/li>\r\n\t<li>Bake for about 7 - 9 minutes, allowing toppings to heat through.<\/li>\r\n\t<li>Remove from oven.
