And they have the goofiest names! Just for fun, here are a few:<\/p>\n<ul>\n<li>Zoodles (zucchini noodles)<\/li>\n<li>Coodles (carrot noodles)<\/li>\n<li>Swoodles (sweet potato noodles)<\/li>\n<li>Squoodles (squash noodles)<\/li>\n<li>Boodles (broccoli stem noodles)<\/li>\n<li>Poodles (parsnip noodles)<\/li>\n<li>Toodles (turnip noodles)<\/li>\n<\/ul>\n<p>~~~~~~~~~~~~~~~~~~~~~~~~<\/p>\n<p>Pasta is easy to make without meat, and even if you want the meat you can always add plant-based meat crumbles. The hard part is replacing the cheese!<\/p>\n<p>So here are some options, one using cashews and another using tofu. The recipe is very forgiving; I often don\u2019t bother to measure the veggies or might change the ratio slightly. And you don\u2019t necessarily have to serve the sauce with noodles. It\u2019s great poured over some baked potatoes and steamed broccoli. <\/p>\r\n\r\n<p><ul>\r\n\t<li>Macaroni noodles<\/li>\r\n\t<li>1 cup potatoes (yellow or russets)<\/li>\r\n\t<li>1\/4 cup carrots<\/li>\r\n\t<li>1\/3 cup onion<\/li>\r\n\t<li>3\/4 cup water (use liquid from boiled veggies)<\/li>\r\n\t<li>1\/2 cup cashews (OR more potatoes, although this will be less creamy)<\/li>\r\n\t<li>1\/4 cup coconut milk or other plant milk<\/li>\r\n\t<li>1\/4 cup nutritional yeast<\/li>\r\n\t<li>1 tbsp lemon juice<\/li>\r\n\t<li>1 tsp salt<\/li>\r\n\t<li>Pepper, to taste<\/li>\r\n\t<li>1\/2 tsp garlic powder<\/li>\r\n\t<li>1 tsp onion powder<\/li>\r\n\t<li>1\/2 tsp turmeric<\/li>\r\n\t<li>1 pinch cayenne pepper or sriracha sauce (optional)<\/li>\r\n\t<li>1 pinch smoked paprika <\/li>\r\n<\/ul><\/p>\r\n\r\n<p><ol>\r\n\t<li>Cook macaroni according to package. <\/li>\r\n\t<li>Bring several cups of water to a boil in a pot, and add chopped potatoes, carrots, and onion. Cook until you can stab the veggies easily.<\/li>\r\n\t<li>Place rest of ingredients in a blender. When veggies are done, use cooking water and blend contents of blender. Once combined, add the veggies and blend until smooth. Be careful not to overblend! <\/li>\r\n\t<li>Pour cheez over macaroni. I think the secret is the tofu sauce and the fact that it uses a combination of eggplant and noodles. <\/p>\r\n<p>\r\nPreparing the eggplant is critical. It must be peeled since you want the eggplant to be as soft as the noodles. If not cooked enough, the eggplant can be chewy which ruins the dish. It\u2019s also better to use 2 small eggplants rather than 1 large, as they will be less bitter. I peel them and slice thinly lengthwise, then bake them to help dry them out (see instructions below).  <\/p>\r\n\r\n<p><ul>\r\n\t<li>2 small eggplants, peeled and sliced thinly lengthwise<\/li>\r\n\t<li>8 oz lasagna, cooked and drained (about 10 pieces)<\/li>\r\n\t<li>1\/2 cup tomato sauce (for spreading on bottom of pan)<\/li>\r\n<\/ul><\/p>\r\n\r\n<p id=\"acc-subtitle\">For the tofu mixture:<\/p>\r\n<p><ul>\t<li>14 oz extra firm tofu<\/li>\r\n\t<li>1\/4 almond milk<\/li>\r\n\t<li>Oregano, fresh basil, salt, or other spices<\/li>\r\n\t<li>2 tbsp lemon juice<\/li>\r\n\t<li>2 garlic cloves, minced<\/li>\r\n\t<li>1 onion, minced<\/li>\r\n\t<li>2 cups fresh spinach, chopped<\/li>\r\n<\/ul><\/p>\r\n\r\n<p id=\"acc-subtitle\">For the vegetable layer:<\/p>\r\n<p><ul>\r\n\t<li>1 red pepper, julienned<\/li>\r\n\t<li>8 oz mushrooms, sliced<\/li>\r\n\t<li>Shredded carrots (I buy them pre-shredded to save effort)<\/li>\r\n\t<li>Zucchini, squash, black beans, or whatever vegetable and leftovers you desire<\/li>\r\n\t<li>1-1\/2 cups tomato sauce, spiced<\/li>\r\n\t<li>1\/2 cup vegetable broth (or water)<\/li>\r\n<\/ul><\/p>\r\n\r\n<p><ol>\r\n\t<li>Sprinkle the sliced eggplant with salt and lay in a baking dish (not aluminum as this will discolor the eggplant). Bake at 350\u00b0 for about 20 minutes.<\/li>\r\n\t<li>Blend all the tofu mixture ingredients except the spinach. Fold in the spinach.<\/li>\r\n\t<li>To prepare the vegetable layer, you can use oil to saut\u00e9 the veggies. I just mix them and let them cook along with the lasagna dish.<\/li>\r\n\t<li>Cover bottom of 9X13 pan with the 1\/2 cup of tomato sauce. <\/li>\r\n\t<li>Layer lasagna, 1\/2 of the tofu mix, eggplant, 1\/2 of the veggie mixture.<\/li>\r\n\t<li>Repeat these layers. <\/li>\r\n\t<li>Optionally sprinkle some breadcrumbs or parmesan cheese to brown the top.<\/li>\t\r\n<li>Bake at 350\u00b0 for about 30-35 minutes. Place on cut end and slice in half lengthwise. <\/li>\r\n\t<li>Scoop out the seeds with a metal ice cream scoop.<\/li>\r\n\t<li>Brush with oil. Lay cut-side down on parchment paper.<\/li>\r\n\t<li>Roast for about 35-45 minutes, or until you can easily scrape strands from the squash. The outer yellow skin will also deepen in color. Baking time will vary depending on the size. But it's tasty and my family likes it!<\/p>\r\n\r\n<p>I've listed approximate amounts for the vegetables, but I don't bother measuring and you can add whatever you like. For a simple Pad Thai, just use tofu, 1-2 veggies, and some bean sprouts. I actually like to fry my tofu separately in my air fryer, since it makes it more crispy. Check out my <a href=\"https:\/\/wendywidgets.com\/ATasteOfYum\/sauces-sides\/\">crispy tofu<\/a> recipe.<\/p>\r\n\r\n<p>Note that you may not need all the sauce, so be careful to not just pour it all in!<\/p>\r\n\r\n<div style=\"clear:both\">\r\n<p id=\"acc-subtitle\">Ingredients:<\/p>\r\n\r\n<p><ul>\r\n\t<li>3 TBSP Sesame oil<\/li>\r\n\t<li>6 oz. rice noodles<\/li>\r\n\t<li>1-1\/2 cups extra-firm pressed tofu, cubed<\/li>\r\n\t<li>2 cloves garlic, minced (2 tsp)<\/li>\r\n\t<li>1 cup mushrooms, chopped<\/li>\r\n\t<li>1 cup red bell pepper, diced<\/li>\r\n\t<li>1 cup grated carrots<\/li>\r\n\t<li>3 green onions, including the green tops, coarsely chopped<\/li>\r\n\t<li>2 cups leafy greens, finely chopped<\/li>\r\n\t<li>1+ cup bean sprouts<\/li>\r\n<\/ul><\/p>\r\n\r\n<p id=\"acc-subtitle\">For the sauce:<\/p>\r\n<p><ul>\t<li>3 TBSP tamari (soy sauce)<\/li>\r\n\t<li>3 TBSP tamarind paste<\/li>\r\n\t<li>3 TBSP sweet chili sauce<\/li>\r\n\t<li>2 TBSP palm sugar (or maple syrup, brown sugar)<\/li>\r\n\t<li>1\/2 tsp ground ginger<\/li>\r\n\t<li>2 TBSP smooth peanut butter OR 1\/2 TBSP corn starch<\/li>\r\n<\/ul><\/p>\r\n\r\n<p id=\"acc-subtitle\">Toppings:<\/p>\r\n<p><ul>\r\n\t<li>Crushed peanuts<\/li>\r\n\t<li>Cilantro, chopped<\/li>\r\n<\/ul><\/p>\r\n\r\n<p><ol>\r\n\t<li>Break the rice noodles in half.
