It\u2019s somewhat like chili, but more about squash than beans. Squash, corn and beans are known as the \u201cthree sisters\u201d of the fall harvest, very appropriate for our family! I have a few tips for making the squash (below).<\/p>\r\n\r\n<p id=\"acc-serv\">Servings: 8 or more<\/p>\r\n\r\n<p><ul>\r\n\t<li>1 large butternut squash (see preparation instructions below)<\/li>\r\n\t<li>2 tbsp olive oil<\/li>\r\n\t<li>1 medium onion, chopped<\/li>\r\n\t<li>4 cloves garlic, minced<\/li>\r\n\t<li>1 medium green or red bell pepper, but into short narrow strips<\/li>\r\n\t<li>14-16 oz can fire-roasted diced tomatoes, with liquid<\/li>\r\n\t<li>2-3 cups cooked or canned (drained and rinsed) pink or pinto beans<\/li>\r\n\t<li>2 cups corn kernels <\/li>\r\n\t<li>1 cup homemade or canned vegetable stock<\/li>\r\n\t<li>1 or 2 small fresh chilis, seeded and minced<\/li>\r\n\t<li>2 tsp ground cumin<\/li>\r\n\t<li>2 tsp chili powder or mesquite seasoning<\/li>\r\n\t<li>1 tsp dried oregano<\/li>\r\n\t<li>Salt and freshly ground black pepper<\/li>\r\n\t<li>\u00bc cup minced fresh cilantro<\/li>\r\n<\/ul><\/p>\r\n\r\n<p><ol>\r\n\t<li>To prepare the squash, peel and remove seeds, then cut into cubes. If you don\u2019t have a sharp enough knife, cut squash in half, place cut side down on a baking sheet with a small amount of water and bake for 20 minutes at 375 to soften before cubing. Optionally, you can buy pre-cut butternut squash which is more expensive but easy! You do not have to pre-cook this.<\/li>\r\n\t<li>Saut\u00e9 onion and garlic in oil. <\/li>\r\n\t<li>Place all ingredients in a crock pot (or a large pan if you don\u2019t have a crock pot). For crock pot, cook at low for at least 2 hours, until vegetables are soft but not mushy.<\/li>\r\n<\/ol><\/p><\/div>\r\n\r\n \r\n\r\n\r\n\r\n\t\t\t\t\t\t Stew\t\t\t\t\t\t\t\t<\/span>\r\n\t\t\t\t\t\t\t<\/a>\r\n\t\t\t\t\t\t  <\/h4>\r\n\t\t\t\t\t\t<\/div>\r\n\t\t\t\t\t\t<div id=\"ac_180_collapse2\" class=\"wpsm_panel-collapse collapse \"  >\r\n\t\t\t\t\t\t  <div class=\"wpsm_panel-body\">\r\n\t\t\t\t\t\t\t<div class=\"recipe\">\r\n<h3 style=\"margin-bottom: 5px\">African Peanut Stew<\/h3>\r\n<p>Peanut stew is definitely an acquired taste, and although this is not something I would make, I\u2019m including it because my girls like it!<\/p>\r\n\r\n<p><ul>\r\n\t<li>1 teaspoon coconut oil<\/li>\r\n\t<li>1 medium sweet onion, diced<\/li>\r\n\t<li>3 cloves garlic, minced<\/li>\r\n\t<li>1 red bell pepper, diced<\/li>\r\n\t<li>1 jalapeno, diced (optional)<\/li>\r\n\t<li>1 medium sweet potato chopped into pieces<\/li>\r\n\t<li>1 28-oz can of diced tomatoes with the juices<\/li>\r\n\t<li>1\/3 cup natural peanut butter<\/li>\r\n\t<li>4 cups vegetable broth<\/li>\r\n\t<li>1-1\/2 teaspoons chili powder<\/li>\r\n\t<li>1\/4 teaspoon cayenne powder (optional)<\/li>\r\n\t<li>1 15-oz can of chickpeas<\/li>\r\n\t<li>2 handfuls of spinach or de-stemmed kale leaves<\/li>\r\n<\/ul><\/p>\r\n\r\n<p><ol>\r\n\t<li>In a large saucepan, heat oil over medium heat and saut\u00e9 the garlic and onions for 5 minutes.<\/li>\r\n\t<li>Add the bell pepper, jalapeno, sweet potato, tomatoes with their juices, season with some salt and pepper, and raise the heat to medium-high and simmer for 5 minutes.<\/li>\r\n\t<li>In a medium bowl, whisk the peanut butter and 1 cup of the vegetable broth until no clumps remain.<\/li>\r\n\t<li>Stir the mixture into the saucepan along with the remaining 3 cups of vegetable broth, chili powder, and cayenne.<\/li>\r\n\t<li>Cover the pan, reduce the head to medium low, and simmer for 10 to 20 minutes or until the sweet potato is fork tender.<\/li>\r\n\t<li>Lastly, stir in the chickpeas and spinach and cook until the spinach is wilted.<\/li>\r\n<\/ol><\/p><\/div>\r\n\r\n\r\n\r\n\r\n\r\n\t\t\t\t\t\t  <\/div>\r\n\t\t\t\t\t\t<\/div>\r\n\t\t\t\t\t<\/div>\r\n\t\t\t\t\t<!-- Inner panel End (optional)<\/li>\r\n\t<li>1 onion, chopped<\/li>\r\n\t<li>6 cans, 15 oz each:<\/li>\r\n\t<ul style=\"margin-bottom: 0\"><li>tomato sauce<\/li>\r\n\t    <li>diced tomatoes<\/li>\r\n\t    <li>dark red kidney beans, drained<\/li>\r\n\t    <li>chili beans<\/li>\r\n\t    <li>baked beans<\/li>\r\n\t    <li>corn<\/li>\r\n\t<\/ul>\r\n\t<li>1 packet chili seasonings, or just use chili and cumin seasoning to taste<\/li>\r\n<\/ul>\r\n\r\n<ol>\r\n\t<li>Brown the <em>'meat'<\/em> and onion.<\/li>\r\n\t<li>Add the remaining ingredients.<\/li>\r\n\t<li>Let simmer for 30 minutes to blend the Bean and Sweet Potato Chili<\/h3>\r\n<p>Serve with tortilla chips and your favorite coleslaw. It\u2019s also great with cornbread!<\/p>\r\n\r\n<p id=\"acc-serv\">Servings: 8 or more<\/p>\r\n\r\n<p><ul>\r\n\t<li>3 medium-large sweet potatoes<\/li>\r\n\t<li>2 tbsp extra virgin olive oil<\/li>\r\n\t<li>1 whole onion, chopped<\/li>\r\n\t<li>3 cloves garlic, minced<\/li>\r\n\t<li>1 medium red bell pepper, diced<\/li>\r\n\t<li>15-oz can black beans, drained<\/li>\r\n\t<li>15-oz can chili beans, drained<\/li>\r\n\t<li>15-oz can kidney beans, drained<\/li>\r\n\t<li>28-oz can diced tomatoes (I use the fire-roasted)<\/li>\r\n\t<li>16-oz can crushed tomatoes<\/li>\r\n\t<li>1-2 small fresh hot chilis, minced *OR* chili powder (2 tbsp)<\/li>\r\n\t<li>1 tbsp brown sugar<\/li>\r\n\t<li>1 tbsp ground cumin<\/li>\r\n\t<li>1 tsp dried oregano<\/li>\r\n\t<li>2 tsp smoked paprika<\/li>\r\n\t<li>Chopped cilantro, to taste<\/li>\r\n\t<li>Salt and pepper, to taste<\/li>\r\n<\/ul><\/p>\r\n\r\n<p id=\"acc-subtitle\">Optional toppings:<\/p>\r\n<p><ul>\r\n\t<li>chopped onion<\/li>\r\n\t<li>diced avocado<\/li>\r\n\t<li>diced fresh tomatoes<\/li>\r\n\t<li>chopped cilantro<\/li>\r\n\t<li>grated cheese<\/li>\r\n<\/ul><\/p>\r\n\r\n<p><ol>\r\n\t<li>Peel and cut sweet potatoes into bite-sized cubes, boil or microwave until just firm. Set aside.<\/li>\r\n\t<li>Heat the oil in large soup pot. Add the onion and garlic and saut\u00e9 over medium heat until the onion is golden. Add the remaining ingredients.
